That deep ruby is anthocyanin, the same pigment family as blackcurrants and elderberries. In lab tests it carried about half of the flower's antioxidant power. Pale hibiscus has already lost it.

What to look for
Colour
Pale hibiscus was dried too fast or sat too long. Whole calyces brew deep ruby and hold the tartness, and the colour comes up in about a minute.

Place 1 tea bag in your cup or pitcher.
